In the 19th century, Emanuel Uggè, who lived here at Celetná 22 in the house of the U Supa Brewery, became famous across Bohemia as the first person to make a beer delicacy now known as “talián”. It’s a cooked blend of pork and beef, filled into casings and preserved in brine. Strictly speaking, it isn’t a smoked sausage at all. Uggè’s creation quickly caught on among Prague locals. At first it was known as “Uggè’s beer delicacy”, which was later shortened to “Uggovka” (pronounced “Užovka”). Back in those days, people would say, “I’m off for a snack at the Talián…” and before long simply, “I’m off for a Talián.” In the end, this name won out over the original “Uggovka” and became the one everyone used.
